Dixie's Sriracha Bacon Cheese Spread

There's a reason that cheese spreads are found at almost every holiday gathering.  They are a good counterpoint to all the sweets around this time of year. This version is a little spicy, because of the Sriracha hot sauce. If you don't like spice, you can reduce the smount of Sriracha sauce and up the honey.  This is the kind of recipe that can be adapted to your tastes.  


Dixie's Sriracha Bacon Pimento Cheese Spread

16 ounces light cream cheese, softened (2 blocks)
1/4 cup butter, softened
1/2 cup light sour cream
1 tablespoon Sriracha sauce 
1/2 teaspoon garlic powder
2 tablespoons honey
1teaspoon ground Pepper

1 small jar pimentos, chopped, juice reserved
1/2 cup scallions, chopped (white and green)
2 cups grated sharp cheddar cheese
6 slices crispy bacon, crumbled or chopped into bits

Using a mixer, cream the cream cheese, butter, sour cream, Sriracha, garlic powder, honey and pepper together until smooth.  If the mixture seems too stiff, add 1-2 tablespoons of reserved pimento juice.  

Mix in the chopped pimentos, scallions, cheddar cheese and bacon bits until evenly mixed.   Chill until serving time.  Serve with crackers and veggies.
